  • 2 teaspoons vanilla extract

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat together the softened butter and granulated sugar until light and fluffy.
  3. Incorporate the egg and vanilla extract into the butter mixture and mix until combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined. Gently fold in the chopped strawberries.
  6. Use a cookie scoop or tablespoon to drop dollops of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake in the preheated oven for about 12-15 minutes or until the edges are lightly golden.
  2. Allow the cookies to cool on a wire rack. Once cool, dust them with powdered sugar and drizzle with melted chocolate.

Notes

For best results, use fresh strawberries. Chilling the dough for 30 minutes before baking helps cookies hold their shape better. Leftover cookies can be stored at room temperature in an airtight container for up to 3 days or frozen for up to 3 months.
