- Wash and hull fresh strawberries, and chop pineapple into chunks if not using canned. Measure out coconut milk and sweetener.
- In your blender, combine strawberries, pineapple chunks, and coconut milk. Add ice cubes if you want a colder smoothie.
- Cover the blender and blend on high until the mixture is uniform and creamy. Check for lumps!
- Taste and adjust sweetness by adding honey or sweetener if desired, then blend again.
- Pour the smoothie into a glass, and add toppings like chia seeds, granola, or fruit slices if you're feeling fancy. Enjoy immediately!
Notes
For a thicker smoothie, use frozen fruit instead of fresh, or add half a banana for creaminess. If you run out of coconut milk, almond or oat milk are excellent substitutes. Store leftovers in an airtight container for up to 24 hours, but freeze for longer storage.
