Preparation
- Start by prepping all your ingredients. Dice the fresh strawberries and set them aside.
- In a mixing bowl, combine the rolled oats, vanilla protein powder, and any optional crushed nuts. Stir them well to blend everything together.
- In a separate bowl, mix the softened cream cheese and Greek yogurt until smooth. Add honey (or maple syrup) and vanilla extract, and mix until fully combined.
- Gradually add your dry ingredient mixture to the cream cheese mixture, stirring as you go. Once combined, gently fold in the diced strawberries.
- Using your hands, scoop out a tablespoon of the mixture and roll it into a ball. Repeat until you’ve used all the mixture.
- Place your protein balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
- Once firm, serve immediately or store in an airtight container.
Notes
Best enjoyed fresh, but can be stored in the fridge for about a week or frozen for up to three months. Allow to thaw in the refrigerator before indulging.
