  • 1 cup rolled oats
  • 1/2 cup cream cheese (softened) Ensure it's softened for easy mixing.
  • 1/2 cup Greek yogurt (plain or vanilla)
  • 1/4 cup honey or maple syrup For sweetness.
  • 1 cup fresh strawberries (diced)
  • 1/4 cup vanilla protein powder
  • 1 tsp vanilla extract
  • 1/4 cup crushed nuts (optional) For added crunch.

Method
 

Preparation
  1. Start by prepping all your ingredients. Dice the fresh strawberries and set them aside.
  2. In a mixing bowl, combine the rolled oats, vanilla protein powder, and any optional crushed nuts. Stir them well to blend everything together.
  3. In a separate bowl, mix the softened cream cheese and Greek yogurt until smooth. Add honey (or maple syrup) and vanilla extract, and mix until fully combined.
  4. Gradually add your dry ingredient mixture to the cream cheese mixture, stirring as you go. Once combined, gently fold in the diced strawberries.
  5. Using your hands, scoop out a tablespoon of the mixture and roll it into a ball. Repeat until you’ve used all the mixture.
  6. Place your protein balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
  7. Once firm, serve immediately or store in an airtight container.

Notes

Best enjoyed fresh, but can be stored in the fridge for about a week or frozen for up to three months. Allow to thaw in the refrigerator before indulging.
