  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Preparation
  1. Start by gathering all your ingredients. Make sure your dates are well-pitted, as they provide the base sweetness for the bites.
  2. In a food processor, combine the pitted dates and dried strawberries. Pulse until blended into a sticky mixture.
  3. Add in the rolled oats, almond flour, coconut flakes, vanilla extract, and a pinch of salt. Pulse again until everything is well combined.
  4. Take a portion of the mixture and roll it into bite-sized balls.
  5. Place your energy bites on a baking sheet lined with parchment paper. Refrigerate for about 30 minutes for them to firm up.

Notes

Your Strawberry Cheesecake Energy Bites can be stored in an airtight container in the fridge for up to one week. They can also be frozen for about three months. When ready to eat, just let them sit at room temperature for a few minutes.
