Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking soda, and salt. Set it aside.
Mixing
- In another large mixing bowl, cream the softened butter and granulated sugar until it's light and fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the flour mixture to the wet ingredients, mixing well until just combined.
- Gently fold in the chopped fresh strawberries, being careful not to overmix.
Cream Cheese Mixture
- In a separate bowl, beat the softened cream cheese and powdered sugar until smooth.
Baking
- Scoop out tablespoons of cookie dough onto the prepared baking sheet. Make a small indentation in the center of each scoop and fill with a teaspoon of the cream cheese mixture.
- Bake in the preheated oven for 12-15 minutes, or until the edges are golden.
- Allow cookies to cool for a few minutes before transferring to a wire rack to cool completely.
