Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar
Fruit Ingredient
  • 1 cup chopped fresh strawberries Use ripe strawberries for best flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and salt. Set it aside.
Mixing
  1. In another large mixing bowl, cream the softened butter and granulated sugar until it's light and fluffy, about 2-3 minutes.
  2. Beat in the egg and vanilla extract until well combined.
  3. Gradually add the flour mixture to the wet ingredients, mixing well until just combined.
  4. Gently fold in the chopped fresh strawberries, being careful not to overmix.
Cream Cheese Mixture
  1. In a separate bowl, beat the softened cream cheese and powdered sugar until smooth.
Baking
  1. Scoop out tablespoons of cookie dough onto the prepared baking sheet. Make a small indentation in the center of each scoop and fill with a teaspoon of the cream cheese mixture.
  2. Bake in the preheated oven for 12-15 minutes, or until the edges are golden.
  3. Allow cookies to cool for a few minutes before transferring to a wire rack to cool completely.

Notes

Serve these cookies with vanilla ice cream or whipped cream. For the best flavor, use ripe strawberries and consider chilling the dough before baking.
