  1. In a medium-sized bowl, combine the chia seeds and almond milk. Stir well, ensuring there are no clumps. Let this mixture sit for about 10 minutes.
  2. In another bowl, add the softened cream cheese and vanilla yogurt. Mix until smooth and well-combined.
  3. Once the chia seed mixture has thickened, gently fold it into the cheesecake mixture. Add honey (or maple syrup) to taste and fold until everything is evenly mixed.
  4. In serving cups or bowls, start by adding a layer of the chia pudding mixture, followed by a layer of chopped strawberries, and repeat until you fill the glasses.
  5. Cover the cups and let them chill in the refrigerator for at least 1-2 hours (or overnight for the best flavor).
  6. Before serving, top with extra strawberries and granola or your choice of nuts for added texture.

Notes

For a nut-free option, try coconut milk instead of almond milk. Greek yogurt can replace regular yogurt for a protein boost. Storing in an airtight container ensures freshness for up to 5 days.
