Preparation
- Preheat your oven to 350°F (175°C). Grease and line a baking pan with parchment paper.
- In a large bowl, beat together the softened butter, brown sugar, and granulated sugar until creamy. Add the egg and vanilla extract, mixing well.
- In another bowl, whisk together the oats, flour, baking soda, salt, and optional cinnamon. Gradually mix the dry ingredients into the wet ingredients until combined.
- Press half of the oat mixture evenly into the bottom of the prepared baking pan.
Making the Cheesecake Layer
- In a separate bowl, beat together the softened cream cheese and powdered sugar until smooth. Spread this layer over the pressed oat mixture.
- Scatter the chopped strawberries and blueberries over the cheesecake layer.
- Crumble the rest of the oat mixture over the top of the berries.
Baking
- Place the pan in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the cheesecake is set.
Final Steps
- Let the bars cool in the pan before lifting them out. Slice into squares and enjoy!

Store leftovers in an airtight container in the refrigerator for up to 5 days. You can freeze them for up to 3 months. Thaw in the fridge overnight and warm briefly in the microwave before serving.
