Ingredients

For the Chicken
  • 2 lbs bone-in skinless chicken thighs
  • 1/3 cup honey
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 6 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp sesame oil
  • 1 tsp chili paste
For the Rice
  • 1 1/2 cups jasmine rice
  • 3 cups chicken broth
  • 1 tsp salt
  • 1/2 tsp black pepper
For the Sauce Thickener
  • 2 tsp cornstarch
  • 1 tbsp cold water
For Topping
  • 3 pieces green onions, sliced
  • 1 tbsp sesame seeds
Additional Oil
  • 2 tbsp olive oil

Method

Preparation
  1. Preheat your oven to 375°F (190°C), ensuring it’s nice and hot to lock in those flavors.
  2. In a bowl, mix the honey, soy sauce, rice vinegar, minced garlic, grated ginger, sesame oil, and chili paste to create the marinade.
  3. Place the chicken thighs in a large baking dish, and pour the marinade over the top. Turn the chicken to ensure it’s fully coated.
  4. Sprinkle jasmine rice evenly around the chicken. Pour chicken broth over the rice and then sprinkle salt and black pepper.
Baking
  1. Cover the baking dish with aluminum foil and bake for 30 minutes.
  2. Remove the foil and return to the oven for an additional 15 minutes, or until the chicken is golden-brown and the rice is fluffy.
Thickening Sauce
  1. In a small bowl, mix the cornstarch with cold water until smooth. Drizzle this mixture into the baking dish, stir gently, and bake for an additional 5 minutes to thicken the sauce.
Serving
  1. Remove from oven, garnish with green onions and sesame seeds, and serve warm.

Notes

Substitutions: You can easily swap out chicken thighs for boneless skinless chicken breasts, but adjust cooking time to prevent dryness. Ensure that rice is even and submerged in broth to avoid burning.
