Dumpling Fillings
  • 2 cups dumpling wrappers
  • 1 lb ground meat (chicken or shrimp)
  • 1 cup chopped vegetables (cabbage, carrots, or mushrooms)
  • 3 cloves garlic (minced)
  • 1 tablespoon ginger (grated)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
Dumpling Sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon vinegar
  • 1 teaspoon chili oil

Method
 

Preparation
  1. In a mixing bowl, combine ground meat, chopped vegetables, minced garlic, grated ginger, soy sauce, and sesame oil. Mix well until all ingredients are well blended and absorbed.
  2. Take a dumpling wrapper and place about a tablespoon of filling in the center. With a finger, moisten the edges of the wrapper with water. Fold the wrapper in half to create a half-moon shape, and pinch the edges to seal tightly.
Cooking
  1. Prepare a steamer with boiling water. Place the dumplings in the steamer basket, ensuring they are not touching each other. Cover and steam for 15 minutes or until the filling is cooked through.
  2. In a small bowl, mix soy sauce, vinegar, and chili oil to make the dumpling sauce. Adjust to taste.

Notes

If using leftovers, refrigerate for up to three days or freeze for up to three months. Reheat in a steamer or microwave while ensuring the dumplings stay tender.
