- In a mixing bowl, combine the all-purpose flour and boiling water. Mix with a spoon until it forms a shaggy dough. Gradually add the cold water, kneading it until a smooth, elastic dough forms. Cover with a damp cloth and let it rest for 30 minutes.
- In another bowl, combine the ground chicken, chopped cabbage, green onions, soy sauce, sesame oil, salt, and pepper. Mix well until the ingredients are evenly combined.
Assembly
- On a floured surface, divide the dough into small pieces and roll each piece into a thin circle (about 3-4 inches in diameter). Place a spoonful of filling in the center of each circle. Carefully fold the dough over the filling and pleat to seal each dumpling securely.
Cooking
- Bring a pot of water to a gentle boil and place a steamer basket over it. Arrange the dumplings in the basket, ensuring they are not touching. Cover and steam for about 15-20 minutes. They're ready when the wrappers become slightly translucent.
- Carefully remove the dumplings from the steamer. Serve hot, accompanied by a soy sauce mixture for dipping.
Notes
Feel free to substitute the ground chicken with ground beef, turkey, or a vegetarian option like tofu. To reheat, steam them again on low heat for about 10 minutes, or microwave them with a sprinkle of water to keep them moist.
