Ingredients

Dumpling Dough
  • 2 cups all-purpose flour
  • 1/2 cup boiling water
  • 1/4 cup cold water
Filling
  • 1/2 pound ground chicken for a Halal-compliant choice
  • 1 cup finely chopped cabbage
  • 3 pieces green onions, chopped
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • to taste Salt and pepper

Method

Preparation
  1. In a mixing bowl, combine the all-purpose flour and boiling water. Mix with a spoon until it forms a shaggy dough. Gradually add the cold water, kneading it until a smooth, elastic dough forms. Cover with a damp cloth and let it rest for 30 minutes.
  2. In another bowl, combine the ground chicken, chopped cabbage, green onions, soy sauce, sesame oil, salt, and pepper. Mix well until the ingredients are evenly combined.
Assembly
  1. On a floured surface, divide the dough into small pieces and roll each piece into a thin circle (about 3-4 inches in diameter). Place a spoonful of filling in the center of each circle. Carefully fold the dough over the filling and pleat to seal each dumpling securely.
Cooking
  1. Bring a pot of water to a gentle boil and place a steamer basket over it. Arrange the dumplings in the basket, ensuring they are not touching. Cover and steam for about 15-20 minutes. They're ready when the wrappers become slightly translucent.
  2. Carefully remove the dumplings from the steamer. Serve hot, accompanied by a soy sauce mixture for dipping.

Notes

Feel free to substitute the ground chicken with ground beef, turkey, or a vegetarian option like tofu. To reheat, steam them again on low heat for about 10 minutes, or microwave them with a sprinkle of water to keep them moist.
