  • 1 lb flank steak, sliced thin
  • 4 large flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • Cilantro, chopped (for garnish)
  • Lime wedges (for serving)
Perfect Sauce Ingredients
  • ½ cup sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt, to taste

Method
 

Preparation
  1. Heat olive oil in a skillet over medium-high heat. Season the flank steak slices with salt, pepper, and garlic powder. Cook the steak for 3-4 minutes until it’s browned and cooked through. Remove from heat and set aside.
  2. In a small bowl, combine sour cream, mayonnaise, lime juice, chili powder, and a pinch of salt. Mix until smooth and set aside.
Assembly
  1. Lay a tortilla flat and sprinkle half of it with shredded cheese, followed by a layer of cooked steak. Add more cheese on top and fold the tortilla in half.
Cooking
  1. In a skillet over medium heat, place the folded quesadilla and cook for 3-4 minutes on each side until golden and crispy. Repeat for remaining tortillas.
Serving
  1. Cut into wedges and serve warm with the Perfect Sauce and lime wedges for that added zest!

Notes

To ensure your quesadillas come out perfectly every time, slice the steak against the grain for maximum tenderness, avoid overstuffing to keep it crispy, use a non-stick skillet, and experiment with different cheeses.
