- Heat olive oil in a skillet over medium-high heat. Season the flank steak slices with salt, pepper, and garlic powder. Cook the steak for 3-4 minutes until it’s browned and cooked through. Remove from heat and set aside.
- In a small bowl, combine sour cream, mayonnaise, lime juice, chili powder, and a pinch of salt. Mix until smooth and set aside.
Assembly
- Lay a tortilla flat and sprinkle half of it with shredded cheese, followed by a layer of cooked steak. Add more cheese on top and fold the tortilla in half.
Cooking
- In a skillet over medium heat, place the folded quesadilla and cook for 3-4 minutes on each side until golden and crispy. Repeat for remaining tortillas.
Serving
- Cut into wedges and serve warm with the Perfect Sauce and lime wedges for that added zest!
