Ingredients

Main Ingredients
  • 1 pound Steak (flank or sirloin) Sliced thin
  • 1 whole Avocado Diced
  • 1 cup Corn (fresh or frozen) Roasted
  • ½ cup Cilantro Chopped
  • ½ cup Sour cream (or Greek yogurt)
  • 2 tablespoons Lime juice
  • 2 tablespoons Olive oil For searing the steak
  • ½ teaspoon Garlic powder
  • Salt and pepper To taste
Optional Toppings
  • Diced tomatoes
  • Sliced jalapeños
  • Shredded cheese

Method

Preparation
  1. Begin by seasoning your sliced steak with garlic powder, salt, and pepper. Heat olive oil in a skillet over medium-high heat.
Cooking
  1. Sear the steak for about 3-4 minutes per side or until cooked to your preferred doneness. Remove from heat and let it rest.
  2. If using fresh corn, grill or roast the corn in the oven until lightly charred; frozen corn can be sautéed in a pan until warm through.
Making the Sauce
  1. In a bowl, mix the sour cream (or Greek yogurt), chopped cilantro, lime juice, and a pinch of salt. Adjust seasoning to taste.
Assembling the Bowl
  1. In a large bowl, layer the warm roasted corn, diced avocado, and sliced steak. Drizzle generously with cilantro cream sauce.
Serving
  1. Top with optional ingredients like diced tomatoes or sliced jalapeños and serve immediately!

Notes

For best results, let your steak rest before slicing to retain juices. Using fresh corn enhances flavor and texture. The cilantro cream sauce ties the dish together beautifully.
