  1. In a mixing bowl, blend the flour, baking powder, and salt. Gradually add water until you form a soft and pliable dough. Knead for about 5 minutes until smooth, then set aside.
  2. In a pan, heat the olive oil over medium heat. Add your diced vegetables and sauté until they start to soften, about 5-7 minutes. If using cheese, stir it into the vegetable mixture and set aside to cool.
Shaping and Cooking
  1. Divide the dough into equal pieces. Roll each piece into a square shape about ¼ inch thick.
  2. Spoon the vegetable and cheese mixture onto one half of each square, then fold the other half over. Pinch the edges to seal tightly, ensuring no filling escapes during cooking.
  3. Heat a non-stick skillet over medium heat and fry the filled squares for about 4-5 minutes on each side, or until golden and crispy.
  4. Once cooked, garnish with fresh herbs and serve warm.

For ingredient substitutions, consider nutritional yeast for flavor or whole wheat flour for a healthier option. Ensure to seal edges tightly to avoid leaks. Store in the refrigerator for 3-4 days or freeze for up to a month.
