  • 1 bunch fresh asparagus, trimmed About 1 pound
  • 8 oz cream cheese, softened
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 1/4 cup finely chopped herbs (chives, parsley, or basil)
  • to taste Salt and pepper
  • optional sliced turkey or chicken deli meat For a heartier option
  • to taste Fresh lemon juice or zest For added brightness

Method
 

Preparation
  1. Wash the asparagus thoroughly and trim off the tough ends.
  2. Blanch the asparagus in boiling water for 3-4 minutes until it turns bright green and slightly tender. Transfer to an ice bath to stop the cooking process, then drain and pat dry.
  3. In a medium bowl, combine the softened cream cheese with the shredded cheese, chopped herbs, and a squeeze of fresh lemon juice. Mix until well combined and season with salt and pepper.
Assembly
  1. Take one asparagus spear and spread a generous layer of the cheese mixture along its length.
  2. If using turkey or chicken, lay a slice on top of the cheese before rolling.
  3. Start from the bottom, roll the asparagus tightly to encase the filling, and secure with a toothpick if necessary.
  4. Repeat the process until all your ingredients are used.
Chilling
  1. Plate the roll-ups and refrigerate for about 30 minutes to allow the flavors to meld.
  2. Serve cold or at room temperature.

Notes

Aim for slim, tender asparagus spears for better rolling. Consider adding garlic powder for extra flavor. Experiment with different fillings like roasted red peppers or various cheeses.
