Ingredients
  

Mushroom Filling
  • 12 large large button mushrooms Gently rinse and remove stems.
  • 1 cup cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1 clove garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Black olives (for the “pupil” of the eyeball)
  • Olive oil for drizzling

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Gently rinse the mushrooms under cold water and pat them dry. Carefully remove the stems and set aside the caps for filling.
  3. In a bowl, combine the cream cheese, mozzarella cheese, minced garlic, parsley, Italian seasoning, and a pinch of salt and pepper. Mix until well combined.
Cooking
  1. Using a spoon, carefully fill each mushroom cap with the cheese mixture. Top each filled mushroom with a slice of black olive to create the 'pupil' of the eyeball.
  2. Place the stuffed mushrooms on a baking sheet, drizzle with olive oil, and bake for 15-20 minutes or until golden and bubbly.
  3. Let them cool for a few minutes, then serve on a spooky platter and watch your guests’ reactions!

Notes

Feel free to customize fillings or adjust baking times for larger mushrooms. Store leftovers in an airtight container for up to three days.
