Preparation
- Preheat the oven to 375°F (190°C).
- In a bowl, combine the chopped spinach, softened cream cheese, grated Parmesan cheese, minced garlic, salt, and pepper. Mix them together until well blended.
- Using a sharp knife, make a pocket in each chicken breast, being careful not to cut all the way through.
- Generously spoon the spinach filling into each chicken breast pocket, packing it tightly.
Cooking
- In a skillet, heat a tablespoon of olive oil over medium-high heat. Add the stuffed chicken breasts and sear for 3-4 minutes on each side until golden brown.
- Transfer the seared chicken to a baking dish and place it in the preheated oven. Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
Serving
- Let the chicken rest for a few minutes before slicing. Serve with your favorite side dishes.
Notes
For substitutions, use mozzarella or feta cheese for a different flavor. Check chicken doneness with a meat thermometer.
