Ingredients
  

For the filling
  • 1 cup fresh spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • Salt and pepper to taste
For the chicken
  • 2 pieces boneless, skinless chicken breasts
  • Olive oil for cooking Use about 1 tablespoon for searing.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine the chopped spinach, softened cream cheese, grated Parmesan cheese, minced garlic, salt, and pepper. Mix them together until well blended.
  3. Using a sharp knife, make a pocket in each chicken breast, being careful not to cut all the way through.
  4. Generously spoon the spinach filling into each chicken breast pocket, packing it tightly.
Cooking
  1. In a skillet, heat a tablespoon of olive oil over medium-high heat. Add the stuffed chicken breasts and sear for 3-4 minutes on each side until golden brown.
  2. Transfer the seared chicken to a baking dish and place it in the preheated oven. Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
Serving
  1. Let the chicken rest for a few minutes before slicing. Serve with your favorite side dishes.

Notes

For substitutions, use mozzarella or feta cheese for a different flavor. Check chicken doneness with a meat thermometer.
