Ingredients
  

For the filling
  • 1 package puff pastry (thawed)
  • 1 cup fresh spinach, chopped
  • 1 cup ricotta cheese Can be substituted with cream cheese or cottage cheese
  • 1/2 cup grated parmesan cheese
  • 1 large egg
  • 1 clove garlic, minced
  • to taste Salt and pepper Season according to your preference
  • for brushing Olive oil Use a pastry brush for even coating

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the chopped spinach, ricotta cheese, grated parmesan cheese, minced garlic, and egg. Season with salt and pepper to taste.
  3. Roll out the thawed puff pastry on a floured surface and cut it into squares, about 3x3 inches each.
  4. Place a generous spoonful of the spinach mixture in the center of each square.
  5. Fold the pastry over to form triangles, and use a fork to seal the edges.
  6. Lightly brush the tops of the puffs with olive oil.
  7. Place the puffs on a baking sheet lined with parchment paper and bake for 15-20 minutes or until golden and puffed.
  8. Serve warm.

Notes

Best enjoyed warm. Can be served with salad, creamy dips, or soups.
