Preparation
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine the chopped spinach, ricotta cheese, grated parmesan cheese, minced garlic, and egg. Season with salt and pepper to taste.
- Roll out the thawed puff pastry on a floured surface and cut it into squares, about 3x3 inches each.
- Place a generous spoonful of the spinach mixture in the center of each square.
- Fold the pastry over to form triangles, and use a fork to seal the edges.
- Lightly brush the tops of the puffs with olive oil.
- Place the puffs on a baking sheet lined with parchment paper and bake for 15-20 minutes or until golden and puffed.
- Serve warm.
Notes
Best enjoyed warm. Can be served with salad, creamy dips, or soups.
