Spinach & Feta Cookies (Spanakopita Cookies)

Ingredients
  

  • 1 egg lightly beaten
  • 4 tbsp olive oil or melted butter
  • 1/4 cup Greek yogurt
  • 1 1/2 cups chopped baby spinach
  • 1 tbsp chopped dill
  • 1 cup crumbled feta cheese
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder optional

Instructions
 

  • Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Prepare the Mixture: In a mixing bowl, whisk together the egg, olive oil (or melted butter), and Greek yogurt until well combined.
  • Add the Greens: Stir in the chopped spinach and dill until evenly distributed throughout the mixture.
  • Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, salt, black pepper, and garlic powder.
  • Combine Wet & Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix!
  • Fold in the Feta: Gently fold in the crumbled feta cheese, ensuring it is evenly distributed without overmixing.
  • Shape the Cookies: Scoop out spoonfuls of the dough and place them onto the prepared baking sheet. Flatten them slightly with your hands to create a cookie shape.
  • Bake: Bake for 18-22 minutes, or until the cookies are golden brown on top and fragrant.
  • Cool & Serve: Let the cookies cool slightly before serving. Enjoy them warm or at room temperature!
