For assembly
  • 4 pieces gluten-free tortillas Any style tortilla can be used.

Preparation
  1. In a mixing bowl, combine the chopped spinach, crumbled feta, softened cream cheese, garlic powder, salt, and pepper. Stir well until all ingredients are fully blended.
  2. Lay a tortilla flat on a clean surface. Spoon a generous amount of the spinach mixture onto the center of the tortilla, spreading it evenly.
  3. Starting from one end, roll the tortilla tightly, ensuring the filling stays inside.
  4. Use a sharp knife to cut the rolled tortilla into bite-sized pinwheels, about 1 inch thick.
  5. Continue with the remaining tortillas and filling.
  6. Arrange your Spinach and Feta Pinwheels on a platter, and they are ready to be enjoyed!

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days. Unassembled pinwheels can be frozen for later use. Reheat in the microwave for 20-30 seconds if desired.
