Ingredients
  

For the Filling
  • 2 cups Fresh spinach, chopped Make sure the spinach is well-washed and dried.
  • 1 cup Feta cheese, crumbled You can substitute with goat cheese.
  • 4 oz Cream cheese, softened
  • 1 tsp Garlic powder
  • ½ tsp Salt
  • ½ tsp Pepper
For the Wrap
  • 4 pieces Gluten-free tortillas You can also use whole wheat tortillas.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix together the softened cream cheese, crumbled feta cheese, chopped spinach, garlic powder, salt, and pepper until well combined.
Assembly
  1. Lay one tortilla flat on your work surface. Spoon a generous amount of the spinach and feta filling onto the tortilla and spread it out evenly, leaving a small border around the edges.
  2. Starting from one edge, carefully roll the tortilla tightly into a cylinder shape.
  3. Using a sharp knife, slice the rolled tortilla into pinwheels, about 1-inch thick. Place the pinwheels on a lined baking sheet with the cut side facing up.
Baking
  1. Bake in the preheated oven for about 15 minutes, or until the pinwheels are golden brown and crispy.
Serving
  1. Let them cool for a minute or two, then serve them warm with your favorite dipping sauce.

Notes

If you have leftover pinwheels, store them in an airtight container in the refrigerator for up to three days. For longer storage, freeze them for up to three months. Reheat in a preheated oven at 350°F (175°C) for about 10-15 minutes.
