  • 1 cup fresh spinach, chopped Nourishing and flavorful

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) to ensure even cooking.
  2. In a mixing bowl, combine chopped spinach, crumbled feta, minced garlic, olive oil, salt, pepper, dried oregano, and lemon juice. Mix thoroughly.
  3. Cut a pocket into the side of each chicken breast without cutting all the way through.
  4. Stuff each chicken pocket with the filling mixture and secure with toothpicks if necessary.
Cooking
  1. Arrange the stuffed chicken breasts in a baking dish. Drizzle lightly with olive oil and season with salt and pepper.
  2. Bake in the preheated oven for about 30-35 minutes, or until chicken reaches an internal temperature of 165°F (75°C).
  3. Let the chicken rest for a few minutes before serving.
  4. Serve hot with a fresh salad or roasted vegetables.

Notes

Can substitute feta cheese for goat cheese or add olives for an extra kick. Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months. Reheat in the oven or microwave.
