Preparation
- Preheat the oven to 375°F (190°C) to ensure even cooking.
- In a mixing bowl, combine chopped spinach, crumbled feta, minced garlic, olive oil, salt, pepper, dried oregano, and lemon juice. Mix thoroughly.
- Cut a pocket into the side of each chicken breast without cutting all the way through.
- Stuff each chicken pocket with the filling mixture and secure with toothpicks if necessary.
Cooking
- Arrange the stuffed chicken breasts in a baking dish. Drizzle lightly with olive oil and season with salt and pepper.
- Bake in the preheated oven for about 30-35 minutes, or until chicken reaches an internal temperature of 165°F (75°C).
- Let the chicken rest for a few minutes before serving.
- Serve hot with a fresh salad or roasted vegetables.
Notes
Can substitute feta cheese for goat cheese or add olives for an extra kick. Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months. Reheat in the oven or microwave.
