- Wash the fresh spinach thoroughly, chop it finely, and sauté in a pan over medium heat for about 3-4 minutes until wilted. Remove from heat and let cool.
- In a mixing bowl, combine the sautéed spinach, shredded cheese, all-purpose flour, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are combined.
- Take a small amount of the mixture and shape it into a ball or oval (about the size of a golf ball). Repeat with the remaining mixture.
- Dip each shaped croquette in the beaten egg and then roll them in breadcrumbs until fully coated.
- In a frying pan, heat oil over medium heat. Once hot, carefully place a few croquettes in the oil and fry until golden brown, usually about 2-3 minutes per side. Remove and drain on paper towels.
- Serve hot with your favorite dipping sauce like marinara or ranch.
Notes
Experiment with different cheeses like feta or gouda. For an extra crispy coating, double-dip the croquettes in egg and breadcrumbs. Ensure spinach is well-drained to avoid sogginess.
