Ingredients
  

For the Croquettes
  • 2 cups fresh spinach, chopped washed and sautéed
  • 1 cup shredded cheese (mozzarella or cheddar) can use various cheeses
  • 1/2 cup all-purpose flour
  • 1/2 cup breadcrumbs for coating
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • to taste Salt and pepper
  • 1 unit egg, beaten for binding
  • as needed Oil for frying for frying

Method
 

Preparation
  1. Wash the fresh spinach thoroughly, chop it finely, and sauté in a pan over medium heat for about 3-4 minutes until wilted. Remove from heat and let cool.
  2. In a mixing bowl, combine the sautéed spinach, shredded cheese, all-purpose flour, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are combined.
  3. Take a small amount of the mixture and shape it into a ball or oval (about the size of a golf ball). Repeat with the remaining mixture.
  4. Dip each shaped croquette in the beaten egg and then roll them in breadcrumbs until fully coated.
  5. In a frying pan, heat oil over medium heat. Once hot, carefully place a few croquettes in the oil and fry until golden brown, usually about 2-3 minutes per side. Remove and drain on paper towels.
  6. Serve hot with your favorite dipping sauce like marinara or ranch.

Notes

Experiment with different cheeses like feta or gouda. For an extra crispy coating, double-dip the croquettes in egg and breadcrumbs. Ensure spinach is well-drained to avoid sogginess.
