  • 3 tablespoons chili oil
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon vinegar

Preparation
  1. Start by boiling a pot of water. Once boiling, add the potato noodles and cook for 5-7 minutes until they become tender, then drain and set aside.
  2. In a large pan, add the chili oil over medium heat. After a minute, toss in the minced garlic and sauté until fragrant, about 30 seconds.
  3. Add the cooked potato noodles to the pan. Drizzle over the soy sauce and vinegar, and sprinkle salt to taste. Toss everything together until the noodles are evenly coated with the spicy sauce.
  4. Transfer the noodles to a serving dish and generously top with green onions and sesame seeds. Enjoy your deliciously spicy meal!

Notes

If substituting potato noodles, consider rice noodles or zucchini noodles for a low-carb option. Adjust chili oil and salt to taste for desired spice. Store leftovers in an airtight container for up to three days. Reheat in the microwave with a splash of water or chili oil.
