Spicy Italian Sausage Pasta

- For the Pasta
- 12 oz penne or rigatoni pasta
- Salt for boiling water
- For the Sauce
- 1 tablespoon olive oil
- 1 lb spicy Italian sausage casings removed
- 1 small onion diced
- 3 cloves garlic minced
- 1 can 28 oz crushed tomatoes
- ½ cup heavy cream
- 1 teaspoon dried oregano
- ½ teaspoon red pepper flakes adjust to taste
- Salt and pepper to taste
- For Garnish
- Fresh basil chopped
- Fresh parsley chopped
- Grated Parmesan cheese
Step 1: Cook the Pasta
Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
Step 2: Cook the Sausage
Heat olive oil in a large skillet over medium heat. Add the Italian sausage and cook, breaking it into crumbles, until browned and cooked through, about 5-7 minutes. Remove the sausage and set aside, leaving the drippings in the skillet.
Step 3: Make the Sauce
In the same skillet, add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another 1 minute. Stir in the crushed tomatoes, heavy cream, oregano, red pepper flakes, salt, and pepper. Simmer for 10 minutes, stirring occasionally.
Step 4: Combine and Serve
Return the cooked sausage to the skillet and add the cooked pasta. Toss everything together until well coated. Garnish with fresh basil, parsley, and grated Parmesan cheese. Serve hot and enjoy!
