Method
Marinating the Chicken
- In a bowl, mix honey, lime juice, soy sauce, chili powder, garlic powder, black pepper, and salt.
- Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Make sure the chicken is fully coated.
- Let it marinate in the refrigerator for at least 15-20 minutes.
Cooking the Chicken
- In a large skillet, heat the olive oil over medium-high heat.
- Remove the chicken from the marinade and add it to the hot skillet. Reserve the marinade for later.
- Cook each side for about 5-6 minutes until the chicken is golden brown and cooked through (internal temperature should be 165°F or 74°C).
- Once the chicken is cooked, pour the reserved marinade into the skillet and bring it to a simmer.
- Let it cook for 2-3 minutes, allowing the marinade to thicken.
Serving the Dish
- Remove the chicken from the skillet and drizzle the thickened sauce over the top.
- Garnish with fresh cilantro before serving.
Notes
For best flavor, use fresh lime juice instead of bottled. You can customize the spiciness by adding red pepper flakes or increasing the chili powder.
