Ingredients
  

For the Chicken Marinade
  • 1 lb boneless, skinless chicken thighs (or breasts)
  • 1/4 cup honey
  • 2 tablespoons fresh ginger, grated
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
For Serving
  • 2 cups cooked rice (jasmine or brown)
  • Chopped green onions and sesame seeds For garnish

Method
 

Marination
  1. In a bowl, combine honey, grated ginger, minced garlic, soy sauce, rice vinegar, sesame oil, salt, and pepper.
  2. Add the chicken thighs to the marinade, coating them evenly. Let it marinate for at least 15 minutes for the best flavor.
Cooking the Chicken
  1. Heat a skillet over medium-high heat.
  2. Add the marinated chicken, cooking for 6-8 minutes on each side until the chicken is cooked through and has a nice caramelized exterior.
Preparing the Rice
  1. While the chicken is cooking, prepare your rice according to package instructions, ensuring it's fluffy and warm.
Assembly
  1. Once the chicken is cooked, slice it into bite-sized pieces.
  2. In bowls, layer your rice, followed by the chicken.
  3. Generously drizzle Yum Yum Sauce over the top and garnish with chopped green onions and sesame seeds.

Notes

If short on time, you can use pre-minced ginger and garlic. Adjust honey or ginger according to preference. Consider adding bell peppers or snap peas for extra color.
