  • 1 medium cauliflower, cut into florets Fresh cauliflower for best flavor.
  • 3 tablespoons harissa paste Adjust based on spice preference.
  • 2 tablespoons olive oil Extra virgin preferred.
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste Salt and pepper To enhance flavors.
  • for garnish Fresh parsley Optional, for garnish.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the cauliflower florets with harissa paste, olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
  3. Spread the seasoned cauliflower florets in a single layer on a baking sheet lined with parchment paper.
Cooking
  1. Roast the cauliflower in the oven for 20-25 minutes, or until it is golden and tender. Shake the baking sheet halfway through for even roasting.
Serving
  1. Once done, remove from the oven, let cool slightly, and optionally garnish with fresh parsley before serving.

Notes

For serving suggestions, pair with grilled chicken, fresh quinoa salad, or chickpea and avocado salad. Store leftovers in an airtight container in the refrigerator for up to 3 days.
