  • 12 large Fresh jalapenos, sliced into rings Discard stems and seeds if you prefer milder heat.
  • 2 cups Sugar
  • 1 cup Cider vinegar Apple cider vinegar can be used as an alternative.
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1/2 teaspoon Turmeric
  • 1 teaspoon Celery seed
  • 1 teaspoon Ground mustard
  • 1/2 teaspoon Black pepper
  • 1 teaspoon Red pepper flakes Adjust to taste.

Preparation
  1. Prepare your workspace: Make sure all your tools are ready—cutting board, knife, and saucepan. Wearing gloves is recommended when handling jalapenos to avoid skin irritation.
  2. Slice the jalapenos: Cut the fresh jalapenos into even rings, discarding the stems and seeds if you prefer milder heat.
Cooking
  1. Create the syrup: In a saucepan, combine sugar, cider vinegar, garlic powder, onion powder, turmeric, celery seed, ground mustard, black pepper, and red pepper flakes. Stir well and cook on medium heat until the sugar has dissolved completely, about 5 minutes.
  2. Add jalapenos: Once the syrup is ready, add the sliced jalapenos to the pan. Stir well to coat them in the syrup.
  3. Simmer: Allow the mixture to simmer for about 10-15 minutes. The jalapenos should become tender yet remain crunchy.
  4. Cool and store: Once cooked, remove from heat and let it cool. Transfer the jalapenos and syrup into a sterilized jar. Seal it and refrigerate. Let it sit for a minimum of 24 hours for the flavors to meld beautifully.

Notes

Allowing the jalapenos to sit for a few days will enhance the flavors further. Store in an airtight container in the refrigerator for up to 2-3 weeks or freeze for longer storage—up to 3 months. Reheat gently for best results.
