  • 1 can coconut milk (400 ml)
  • 2 tablespoons olive oil
  • 1 piece onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon chili flakes adjust based on your spice preference
  • 1 teaspoon paprika

Preparation
  1. Season the chicken thighs with salt, pepper, and paprika. Ensure they are coated evenly.
Cooking
  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and ginger, and cook for another minute until fragrant.
  3. Add the seasoned chicken thighs to the skillet. Sear each side for about 5-6 minutes, until golden brown.
  4. Pour in the coconut milk and soy sauce, stirring well to incorporate the flavors.
  5. Sprinkle the chili flakes over the chicken, and give the dish a gentle stir to ensure everything is well mixed.
  6. Lower the heat, cover the skillet, and let it simmer for 20-25 minutes, or until the chicken is cooked through and tender.
  7. Remove from heat, garnish with fresh cilantro if desired, and serve hot over rice, accompanied by your favorite sides.

Notes

To enhance the meal, serve over fluffy jasmine rice, add roasted vegetables, or a fresh salad. Pair with limeade or coconut water for a delightful beverage.
