  • 2 large large cucumbers
  • 1 tablespoon salt
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce ensure it’s Halal
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1 teaspoon red pepper flakes adjust to your spice preferences
  • 2 pieces green onions sliced
  • to taste sesame seeds for garnish

Method
 

Preparation
  1. Wash the cucumbers thoroughly, slice them in half lengthwise, then into thin half-moon pieces.
  2. Place the cucumber slices in a colander and sprinkle salt over them. Let sit for about 10 minutes to draw out excess moisture.
Dressing
  1. In a bowl, combine rice vinegar, soy sauce, sesame oil, sugar, and red pepper flakes. Whisk until the sugar is dissolved.
Combine Ingredients
  1. Rinse the salted cucumbers under cold water and pat dry with paper towels.
  2. Transfer the cucumbers to a mixing bowl, add the sliced green onions, and pour the dressing over. Toss gently to combine.
Serve
  1. Transfer the salad to a serving dish, sprinkle sesame seeds on top, and enjoy immediately or let chill in the refrigerator for about 30 minutes to enhance flavors.

Notes

For best results, let the salad sit in the dressing for at least 15 minutes before serving. Avoid using aging cucumbers to ensure a satisfying crunch.
