Preparation
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large mixing bowl, blend the softened cream cheese and butter until light and fluffy with an electric mixer (about 2-3 minutes).
- Gradually mix in the sugar until well combined. Then add the egg and vanilla extract, mixing until smooth.
- In a separate bowl, whisk together flour, baking powder, cinnamon, nutmeg, ginger, and salt.
- Gradually add the dry ingredients to the cream cheese mixture, blending until just combined.
- Using a tablespoon, drop rounded balls of dough onto prepared baking sheets, leaving space between cookies.
Baking
- Bake cookies for 12-15 minutes or until edges begin to turn golden; check around the 12-minute mark.
- Remove from the oven and allow cookies to cool on the baking sheets for about 5 minutes before transferring to a wire rack to cool completely.
Notes
Store cookies in an airtight container in the refrigerator for up to a week; they can also be frozen for up to three months.
