Method
Preparation
- Preheat your oven to 450°F (232°C). Ensure your chicken is fully thawed if frozen, and pat it dry with paper towels.
Spatchcock the Chicken
- Flip the chicken breast-side down. Using sharp kitchen shears, cut along both sides of the backbone and remove it. Flip the chicken over and press down firmly on the breastbone until you hear a crack to help flatten it.
Season the Chicken
- In a bowl, mix the olive oil, salt, black pepper, garlic powder, and paprika. Rub this seasoning mixture all over the chicken, ensuring to coat it well under the skin for maximum flavor.
Roast the Chicken
- Place the chicken skin-side up on a baking tray or in a roasting pan. Roast in the preheated oven for about 45-50 minutes or until the internal temperature reaches 165°F (74°C) at the thickest part of the chicken.
Rest Before Serving
- After removing the chicken from the oven, let it rest for about 10-15 minutes to allow the juices to redistribute.
Serve and Enjoy
- Garnish with fresh herbs, slice, and serve hot!
Notes
For extra flavor, consider lifting the skin and spreading a mixture of softened butter and herbs underneath. Accompany with sides like roasted potatoes or seasonal veggies.
