  • 1 medium red bell pepper, chopped
  • 14 oz can diced tomatoes With juice
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Method
 

Preparation
  1. Start by rinsing the cauliflower under cool water. Remove the leaves and stem, then cut it into smaller chunks.
  2. Use a food processor to pulse the cauliflower until it resembles rice grains.
Cooking
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté for about 2-3 minutes until it becomes translucent.
  3. Stir in the minced garlic and chopped red bell pepper, cooking for another 3-4 minutes.
  4. Once the vegetables are softened, add the riced cauliflower to the skillet and mix well.
  5. Pour in the can of diced tomatoes (with the juice) and season with smoked paprika, cumin, salt, and pepper.
  6. Stir everything together and let it cook for another 5-7 minutes, allowing the flavors to meld.
Serving
  1. Once the cauliflower is tender but still has some texture, remove it from the heat.
  2. Garnish with fresh cilantro for that extra pop of flavor and color.
