Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, add the ground turkey. Cook and stir until browned and cooked through, about 5-7 minutes.
- Add the chopped onion and minced garlic to the skillet and sauté for an additional 3-4 minutes until the onion becomes translucent.
- Stir in the drained black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper. Let cook together for another 5 minutes.
- Pour the turkey and bean mixture into a greased 9x13 inch baking dish.
- Top with the shredded cheese.
- Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
- Serve hot with tortilla chips or tortillas.
Notes
Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months. Thaw in the refrigerator overnight and reheat at 350°F until heated through.
