  • 1 lb ground turkey Halal-friendly
  • 1 can black beans, drained and rinsed Ensure excess moisture is removed to prevent sogginess
  • 1 can corn, drained Ensure excess moisture is removed to prevent sogginess
  • 1 can diced tomatoes with green chilies
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • to taste Salt and pepper
  • 1 cup shredded cheese (cheddar or Mexican blend) For topping
  • as needed Tortilla chips or tortillas for serving

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, add the ground turkey. Cook and stir until browned and cooked through, about 5-7 minutes.
  3. Add the chopped onion and minced garlic to the skillet and sauté for an additional 3-4 minutes until the onion becomes translucent.
  4. Stir in the drained black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper. Let cook together for another 5 minutes.
  5. Pour the turkey and bean mixture into a greased 9x13 inch baking dish.
  6. Top with the shredded cheese.
  7. Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
  8. Serve hot with tortilla chips or tortillas.

Notes

Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months. Thaw in the refrigerator overnight and reheat at 350°F until heated through.
