Main Ingredients
  • 1 lb ground turkey Can substitute with lean ground chicken or beef.
  • 1 cup rice Long-grain or jasmine works best.
  • 1 can black beans Drained and rinsed.
  • 1 can corn Drained.
  • 1 cup diced tomatoes Canned or fresh.
  • 1 packet taco seasoning Ensure it’s Halal.
  • 2 cups chicken broth Or vegetable broth for a vegetarian option.
  • 1 medium bell pepper Diced. Any color preferred.
  • 1 medium onion Chopped.
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
  • for garnish Chopped cilantro

Method
 

Cooking
  1. Heat a large skillet over medium heat. Add a splash of olive oil if needed to prevent sticking.
  2. Add the ground turkey to the skillet and cook until browned and cooked through, about 7-10 minutes.
  3. Toss in the chopped onion and diced bell pepper, cooking until soft, around 3-5 minutes.
  4. Stir in garlic powder, taco seasoning, salt, and pepper to toast spices slightly.
  5. Mix in rice, black beans, corn, diced tomatoes, and chicken broth. Stir to integrate all ingredients.
  6. Bring the mixture to a gentle boil, then reduce heat to low, cover, and let it simmer for about 20 minutes or until rice is tender.
  7. Fluff the dish with a fork and serve garnished with fresh chopped cilantro.

Notes

Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat with a splash of broth to retain moisture.
