Cooking
- Heat a large skillet over medium heat. Add a splash of olive oil if needed to prevent sticking.
- Add the ground turkey to the skillet and cook until browned and cooked through, about 7-10 minutes.
- Toss in the chopped onion and diced bell pepper, cooking until soft, around 3-5 minutes.
- Stir in garlic powder, taco seasoning, salt, and pepper to toast spices slightly.
- Mix in rice, black beans, corn, diced tomatoes, and chicken broth. Stir to integrate all ingredients.
- Bring the mixture to a gentle boil, then reduce heat to low, cover, and let it simmer for about 20 minutes or until rice is tender.
- Fluff the dish with a fork and serve garnished with fresh chopped cilantro.
Notes
Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat with a splash of broth to retain moisture.
