Preparation
- Start by gathering all your ingredients. Dice the sweet potatoes, chop the onion and bell pepper, and mince the garlic.
Cooking
- In a large skillet, heat the olive oil over medium-high heat.
- Add the ground beef to the skillet. Break it apart with a spatula and cook until it’s browned and cooked through, about 5-7 minutes. Season with salt, pepper, cumin, and chili powder as it cooks.
- Once the beef is cooked, add the chopped onion, bell pepper, and minced garlic. Sauté for about 3-4 minutes until the vegetables start to soften.
- Stir in the diced sweet potatoes and black beans. Make sure everything is well combined.
- Reduce the heat to medium-low, cover the skillet with a lid, and let everything cook for about 15-20 minutes. Stir occasionally to ensure the sweet potatoes become tender and flavorful.
- Once the sweet potatoes are cooked through, taste and adjust the seasoning if necessary. Garnish with fresh cilantro before serving.
Notes
Substitutions: You can swap ground beef with ground chicken or turkey, or use lentils or extra beans for a vegetarian option. Ensure not to overcrowd the skillet to achieve browning.
