  • 1 lb Ground Beef (Halal)
  • 2 Medium Sweet Potatoes, diced
  • 1 Medium Onion, chopped
  • 2 Cloves Garlic, minced
  • 1 Bell Pepper any color, chopped
  • 1 can Black Beans, drained and rinsed 15 oz
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • Salt and Pepper, to taste
  • 2 tbsp Olive Oil
  • Fresh Cilantro, for garnish (optional)

Method
 

Preparation
  1. Start by gathering all your ingredients. Dice the sweet potatoes, chop the onion and bell pepper, and mince the garlic.
Cooking
  1. In a large skillet, heat the olive oil over medium-high heat.
  2. Add the ground beef to the skillet. Break it apart with a spatula and cook until it’s browned and cooked through, about 5-7 minutes. Season with salt, pepper, cumin, and chili powder as it cooks.
  3. Once the beef is cooked, add the chopped onion, bell pepper, and minced garlic. Sauté for about 3-4 minutes until the vegetables start to soften.
  4. Stir in the diced sweet potatoes and black beans. Make sure everything is well combined.
  5. Reduce the heat to medium-low, cover the skillet with a lid, and let everything cook for about 15-20 minutes. Stir occasionally to ensure the sweet potatoes become tender and flavorful.
  6. Once the sweet potatoes are cooked through, taste and adjust the seasoning if necessary. Garnish with fresh cilantro before serving.

Notes

Substitutions: You can swap ground beef with ground chicken or turkey, or use lentils or extra beans for a vegetarian option. Ensure not to overcrowd the skillet to achieve browning.
