  • 6 medium ripe tomatoes, sliced Choose ripe, juicy tomatoes for the best flavor.
  • 1 cup mayonnaise
  • 1 cup shredded cheddar cheese Sharp cheddar is recommended; other cheeses like mozzarella or Monterey Jack can be used.
  • 1/2 cup chopped green onions
  • 1 pre-baked pie crust pre-baked pie crust Can be store-bought or homemade.
  • Salt and pepper to taste
  • Fresh basil for garnish (optional) Garnish for serving.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Use a pre-baked pie crust, or make your own ensuring it’s flaky.
  3. Slice your tomatoes into medium-thick slices and pat them dry if necessary.
  4. In a mixing bowl, combine mayonnaise, shredded cheddar cheese, and chopped green onions. Add salt and pepper to taste, and stir until well-combined.
  5. Layer a portion of the tomato slices in the bottom of the crust, followed by half of the mayonnaise mixture. Repeat with another layer of tomatoes and finish with the remaining mayonnaise mixture.
Baking
  1. Bake the assembled pie in the preheated oven for about 30 minutes, or until bubbly and golden brown.
Garnishing and Serving
  1. Let the pie cool for a few minutes before slicing. Garnish with fresh basil if desired.
  2. Slice and enjoy warm or at room temperature.

Notes

Store leftovers in the refrigerator for about 3-4 days. Freeze wrapped tightly for up to 2 months. Reheat in the oven at 350°F (175°C) for about 20-25 minutes.
