Preparation
- Preheat your oven to 350°F (175°C).
- Peel and cube your sweet potatoes into even pieces.
- Place the cubed sweet potatoes in a large pot of water, bring to a boil, and cook for about 15 minutes, or until they are tender when pierced with a fork.
Casserole Preparation
- Drain the sweet potatoes and return them to the pot.
- Add in the maple syrup, brown sugar, softened butter, vanilla extract, salt, and cinnamon.
- Mash the sweet potatoes with a potato masher or fork until you reach a smooth consistency.
- Spoon the sweet potato mixture into a greased 9×13-inch baking dish and smooth the top.
- Sprinkle the chopped pecans evenly over the top and add mini marshmallows if desired.
Baking
- Bake in the preheated oven for 25-30 minutes, or until the topping is golden and the casserole is heated through.
- Remove from the oven and let it sit for a few minutes before serving.
Notes
This casserole is great for leftovers. Store in an airtight container in the fridge for up to 3 days, or freeze for about a month. Reheat at 350°F for 20-25 minutes in a covered dish.
