Ingredients
  

For the casserole
  • 4 medium sweet potatoes, peeled and cubed
  • 1/2 cup maple syrup
  • 1/2 cup milk (dairy or non-dairy) can substitute with coconut milk for a tropical flavor
  • 1/4 cup butter, melted can be replaced with coconut oil or vegan butter for a vegan option
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
Optional toppings
  • 1/2 cup chopped pecans can roast for extra flavor
  • 1/2 cup mini marshmallows

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Boil a pot of water and add the cubed sweet potatoes. Cook for about 15-20 minutes or until tender.
  3. Drain the sweet potatoes and mash them until smooth in a mixing bowl.
Mixing
  1. Add maple syrup, milk, melted butter, vanilla extract, cinnamon, and nutmeg to the mashed sweet potatoes. Stir until fully combined and creamy.
Baking
  1. Pour the mixture into a greased baking dish and smooth the top.
  2. Sprinkle chopped pecans and mini marshmallows on top if using.
  3. Bake for 25-30 minutes until heated through and marshmallows are golden.
Serving
  1. Let the casserole cool slightly before serving warm to your family.

Notes

To avoid lumps, ensure sweet potatoes are fully cooked before mashing. Can prepare a day ahead and store in the fridge.
