  • 1 cup boiling water
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1 egg
  • 1 teaspoon baking powder

  • 2 tablespoons butter melted

  • Mix the Cornmeal and Salt: In a large mixing bowl, combine 1 cup of cornmeal and 1/2 teaspoon of salt.

  • Prepare the Wet Ingredients: In another bowl, whisk together 1/2 cup of milk, 1 egg, 1 teaspoon of baking powder, and 2 tablespoons of sugar.
  • Combine Mixtures: Mix the wet ingredients into the cornmeal mixture until fully combined.
  • Incorporate Butter: Stir in 2 tablespoons of melted butter to enhance the flavor.
  • Heat the Skillet: In a skillet, heat oil over medium heat until hot.
  • Cook the Pancakes: Pour the batter onto the skillet forming pancakes. Cook for about 3-4 minutes on one side until golden brown, then flip and cook for another 2-3 minutes.
