Ingredients

For the Dumplings
  • 1 cup sourdough starter (active and bubbly)
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/4 cup water (more if needed) Add more water if the dough is too thick
  • fresh herbs (optional: parsley or dill) For added flavor

Method

Preparation
  1. In a large mixing bowl, combine the flour, baking powder, garlic powder, and salt. Whisk them together until well mixed.
  2. Add your bubbly sourdough starter to the dry mixture. Using a spatula, mix until combined. The dough will be quite thick.
  3. Slowly add water, one tablespoon at a time, mixing until the dough is soft but not overly sticky. Aim for a consistency that easily holds together.
  4. Using your hands, shape the dough into small balls, about the size of a golf ball. If the dough is too sticky, you can lightly flour your hands.
Cooking
  1. Bring your favorite broth to a gentle simmer in a large pot.
  2. Carefully drop the dumplings into the simmering broth. Cover the pot and let them cook for about 10-15 minutes. They’re done when they float to the surface and are cooked through.
Serving
  1. Ladle the broth and dumplings into bowls. Add your favorite toppings, like fresh herbs or yogurt, and enjoy!

Notes

Substitutions: For a gluten-free option, use a gluten-free all-purpose flour blend. Ensure your broth is simmering before adding the dumplings for proper cooking.
