  • 2 tablespoons fresh chives, chopped optional, for garnish

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, toss the quartered onions with olive oil, ensuring they are well-coated. Sprinkle them with a generous pinch of salt and pepper.
  3. Spread the onions out evenly on a baking sheet lined with parchment paper.
Cooking
  1. Roast the onions in the preheated oven for about 30 minutes or until they are golden brown and tender, giving them a gentle stir halfway through.
  2. Remove from the oven and immediately dollop sour cream over the hot onions.
  3. Sprinkle with cheddar cheese and return to the oven for an additional 5-10 minutes, until the cheese is melted and bubbly.

Notes

For extra flavor, try using different cheese varieties. Store leftovers in an airtight container for 3-4 days in the refrigerator. To reheat, warm in the oven at 350°F (175°C) for 10-15 minutes.
