Ingredients
  

Cookie Base
  • 1 cup unsalted butter, softened Use unsalted for best flavor.
  • 1 cup sugar
  • 1 large egg Room temperature is preferable.
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup strawberry chips or finely chopped strawberries Strawberry chips preferred for flavor.
Topping
  • 24 pieces Hershey's Kisses or any non-alcoholic chocolate candy For topping each cookie.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened unsalted butter and sugar until light and fluffy, about 2-3 minutes.
  3. Beat in the egg and vanilla extract until well incorporated.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Gently fold in the strawberry chips or finely chopped strawberries.
Baking
  1. Using a spoon or cookie scoop, drop heaping tablespoons of dough onto a lined baking sheet.
  2. Bake in the preheated oven for about 10-12 minutes until the edges are golden.
  3. Immediately press a chocolate kiss into the center of each cookie while they are still warm.
Cooling
  1. Let the cookies cool on the baking sheet for a minute before transferring them to a wire rack to cool completely.

Notes

For a richer flavor, use unsalted butter. If strawberry chips aren’t available, use finely chopped dried strawberries or white chocolate chips as alternatives. Store in an airtight container at room temperature for up to a week or freeze with wax paper between layers.
