Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until fully incorporated.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring just until combined.
- Gently fold in the sprinkles until evenly distributed.
- Cover the dough with plastic wrap and chill in the refrigerator for about 15-20 minutes.
Baking
- Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, flattening them slightly and adding extra sprinkles on top.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for up to a week. Freeze for up to three months.
