  • 1 cup granulated sugar
  • 1 large egg Should be at room temperature.
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup sprinkles (plus extra for topping) Use colorful sprinkles for decoration.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until fully incorporated.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  6. Gently fold in the sprinkles until evenly distributed.
  7. Cover the dough with plastic wrap and chill in the refrigerator for about 15-20 minutes.
Baking
  1. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, flattening them slightly and adding extra sprinkles on top.
  2. Bake for 10-12 minutes or until the edges are lightly golden.
  3. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to a week. Freeze for up to three months.
