Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking soda, baking powder, ground ginger, cinnamon, cloves, and salt until well mixed.
- In a separate large bowl, beat the softened butter and brown sugar until fluffy and pale in color.
- Mix in the molasses and egg until fully incorporated.
- Gradually add the dry ingredients into the wet ingredients, mixing well until there are no dry streaks.
- Using a spoon or a cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
- Bake in the preheated oven for 10-12 minutes, until the cookies are set but still soft in the center.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For best results, consider chilling the dough for about 30 minutes before shaping. Store in an airtight container at room temperature for up to one week, or freeze for longer storage.
