Ingredients
  

For the Cookie Dough
  • 1 cup unsalted butter, softened Ensure butter is at room temperature for easy mixing.
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy. Beat in the egg, lemon juice, lemon zest, and vanilla extract until fully combined.
  3. In another bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt.
  4. Gradually add the dry mixture into the wet mixture, stirring until just combined. Avoid overmixing to keep your cookies tender.
  5. Using a cookie scoop or tablespoon, drop rounded balls of dough onto a parchment-lined baking sheet, leaving some space in between each cookie for spreading.
  6. Place the baking sheet in your preheated oven and bake for 8-10 minutes, or until the edges are slightly golden.
  7. Allow your cookies to cool on the baking sheet for around 5 minutes before transferring them to a wire rack to cool completely.

Notes

For a less sweet flavor, try reducing the sugar. You can also use egg substitutes for a vegan option—applesauce or flaxseed meal works wonderfully! Store in an airtight container at room temperature for up to a week or freeze for up to 3 months.
