Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer until light and fluffy.
  4. Beat in the egg, lemon juice, lemon zest, and vanilla extract until fully combined.
  5. Gradually add the flour mixture to the wet ingredients, stirring until just combined. Avoid overmixing.
Baking
  1. Use a cookie scoop or tablespoon to drop dough onto the lined baking sheet, spacing them a few inches apart.
  2. Bake for about 10-12 minutes, or until the edges are lightly golden.
  3. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
  4. If desired, dust with powdered sugar before serving.

Notes

For best results, use fresh lemons and avoid overmixing the dough. Letting the dough chill for 30 minutes can enhance flavors and improve texture. Optional ingredients like poppy seeds or lavender can be added for a twist.
