Ingredients
  

Dry Ingredients
  • 1 cup almond flour
  • 1/2 cup keto-friendly sweetener (like erythritol or monk fruit) Choose based on your taste preference.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/4 cup unsalted butter (softened) Ensure it's softened, not melted.
  • 1 large egg
  • 1 teaspoon vanilla extract
Optional Add-ins
  • 1/2 cup sugar-free chocolate chips Optional for added sweetness.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the almond flour, baking soda, and salt. Stir to incorporate.
  3. In a separate bowl, cream together the softened butter and sweetener with an electric mixer until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry mixture to the wet mixture, stirring gently until fully combined.
  6. If using, gently fold in the chocolate chips.
  7. Scoop tablespoon-sized amounts of dough onto a lined baking sheet.
Baking
  1. Bake for 12-15 minutes or until edges are golden brown.
  2. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to 5 days. Freeze in a freezer-safe bag for up to three months. Microwave for 10-15 seconds to reheat.
