Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, combine the almond flour, baking soda, and salt. Stir to incorporate.
- In a separate bowl, cream together the softened butter and sweetener with an electric mixer until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry mixture to the wet mixture, stirring gently until fully combined.
- If using, gently fold in the chocolate chips.
- Scoop tablespoon-sized amounts of dough onto a lined baking sheet.
Baking
- Bake for 12-15 minutes or until edges are golden brown.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Store in an airtight container at room temperature for up to 5 days. Freeze in a freezer-safe bag for up to three months. Microwave for 10-15 seconds to reheat.
