  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup powdered sugar
  • 1 egg
  • 2 teaspoons pure vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large mixing bowl, beat the softened butter, granulated sugar, and powdered sugar until light and fluffy.
  3. Add the egg and vanilla extract, continuing to beat until smooth.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
  5. Using a cookie scoop or tablespoon, drop balls of dough onto prepared baking sheets, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes or until the edges are lightly golden. The centers may look soft but will firm up as they cool.
  7. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

Notes

To keep the cookies fresh, store them in an airtight container at room temperature for up to a week. They freeze well for up to three months.
