  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt

  • 1 large egg
  • 1 tablespoon lemon zest Use a fine grater for best flavor.
  • 2 tablespoons fresh lemon juice

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set this mixture aside.
  3. In a large mixing bowl, beat the softened butter and granulated sugar together until the mixture is light and fluffy.
  4. Add the egg, lemon zest, fresh lemon juice, and vanilla extract to the butter-sugar mix. Mix until well combined.
  5. Gradually incorporate the dry ingredients, stirring gently until just combined.
  6. Scoop the dough into small balls, about 1 tablespoon each, and roll them in powdered sugar.
  7. Arrange the dough balls on your prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake the cookies for 10-12 minutes, until the edges are set and the tops develop a crinkled look.
  2. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

For best results, use room temperature ingredients and avoid overmixing the dough. Store cookies in an airtight container for up to a week or freeze for up to three months.
