Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set this mixture aside.
- In a large mixing bowl, beat the softened butter and granulated sugar together until the mixture is light and fluffy.
- Add the egg, lemon zest, fresh lemon juice, and vanilla extract to the butter-sugar mix. Mix until well combined.
- Gradually incorporate the dry ingredients, stirring gently until just combined.
- Scoop the dough into small balls, about 1 tablespoon each, and roll them in powdered sugar.
- Arrange the dough balls on your prepared baking sheet, spacing them about 2 inches apart.
Baking
- Bake the cookies for 10-12 minutes, until the edges are set and the tops develop a crinkled look.
- Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
